Ahhh My Eyes!!!

Why is it, cheese is soooo expensive?? Especially Parmesan? I mean on sale the cheapest I could find shredded Parmesan at Albertsons was just under $3 like $2.85 and normally it’s like $3-5! That is crazy and stupid might I add! Any way it was an easy and quick trip to the store…only needed 2 ingredients since I had mayonnaise already.


Sweet Onion: $1.99 per lb

When I cut up my onions I wanted the pieces to be small so I used a food processor chopper thing to do it. It made it go a lot faster and I think this recipe should be changed to be called "Ahhh my eyes, Baked Onion Dip" because I came to find that sweet onion is one that makes you cry…Oh My Gosh! My eyes hurt sooo bad even hours later after I was done making it I was laying in bed and they started to sting again! I hate onions that make your eyes burn! Luckily I wasn’t wearing my contacts at the time, that is the worst!

So by the time the dip was done cooking I was way too tired to try it so I wrapped it in tin foil and in the refrigerator it went. Oh and I looked at my Parmesan cheese bag and it turns out I only used 1 ½ cups of cheese instead of the 2 cups the recipe called for…I hope that doesn’t wreak the dip…



This afternoon I pulled the dip out and microwaved it till it was hot again. I know some dips you stir and they look the same no matter what but this dip doesn’t look very pretty after you stir it and microwave it so I do recommend serving it right out of the oven.



I have to admit I was a little afraid to try it but I ate some on a Ritz cracker and after the second cracker I think I really like it! The less cheese didn’t hurt it at all!

Now my boyfriend doesn’t like onions so if I tell him it’s an onion dip then he won’t try it. Last time we tried to get him to eat onions we told him it was a Hungarian pomegranate… and he believed us! We couldn’t believe how gullible he was! And he ate several bites up until one of his friends started laughing at him and he figured out there is no such thing as a Hungarian pomegranate and he spit it out. Now that I think about it…is there such a thing as a Hungarian pomegranate? If you know please send me a message! He now knows what pomegranates look like so this time I think I am going to try and tell him it’s an “Asian White Bean Dip”…that sounds pretty good since most dips have beans in them and the dip is white…sure I’ll go with that! hahaha I’ll let you know how it goes!
