So far this is a great recipe because it uses tons of things I already had or things I use on a regular basis so if I have extra it won’t go to waste. I already had chicken and Ritz crackers and Parmesan cheese. So all I spent at the store was:
Mozzarella cheese: $2.79
Ragu spaghetti sauce: $1.89
Cream Cheese: $1.99
Broccoli: $2.49
I used broccoli instead of spinach because I don’t like spinach so we will see if you can substitute it or not…I figure they are both green… ha ha ha
For a grand total of: $9.16
(Now if you have more ingredients then it will be cheaper but if you have less it will be more.)
Alright so I started off by thawing the chicken and then I used a rolling pin the flatten the chicken which didn’t really work but oh well. The mashing of the Ritz cracker was easy. Then I combined the cream cheese with tiny tiny tiny pieces of broccoli and mozzarella cheese and I microwaved it a little to soften up the cream cheese so that it would be easier to mix together. I spread the stuffing on the chicken which was a piece of cake but rolling the chicken up…well that’s another story. All the stuffing kept getting squeezed out of it! So finally I just padded it back in even though it was still hanging out. The tooth pick helps a lot, in fact I couldn’t imagine trying to roll it with out the tooth pick…however the 165 degrees is a little weird I have never cooked anything at that low of a degree before.
It’s been 20 minutes and the chicken hasn’t done anything so I turned up the oven to 350 degrees.
Well it doesn’t look exactly like the picture but not too bad! Here is the finished product:
As far as taste goes…it’s ok. I don’t think it’s anything to write home about but I will see how my boyfriend likes it when he gets home. Ya know…get a second opinion. I am a little shocked you don’t taste the Ritz crackers at all. I thought for sure they would have a stronger presence.

Well he loves it! But then again I am thinking he loves everything ha ha ha I may try this one again...not as good as the cake but definitely better then the garlic :)
