#35 Cheesy Potato Chowder

I love my potato soup recipe and I'm in the mood for it so I'm going to try a different version so that maybe in winter I can have two options to go to since the instructions make so much, it does get boring after a while...maybe I mix it up with this.


Ingredients:

1 can Cream of celery soup
3 oz cream cheese
2 cups chicken broth
2 1/2 cups cubed unpeeled red potatoes
1/4 cup chopped green onion
1/2 cup finely shredded cheddar cheese divided
sliced green onion

Directions:

In a large saucepan combine celery soup and cream cheese; place over medium heat. Cook, stirring constantly, until smooth. Stir in Chicken broth.
Add potatoes, onion, and black pepper to taste.
Simmer uncovered 30 minutes or until potatoes are tender, stirring occasionally.
Remove from heat and stir in 1/4 cup of the cheddar, stirring until smooth.
Top with remaining 1/4 cup cheddar and sliced green onion, and serve.
