#29 Canadian Bacon Potato Skins

Ingredients

6 large baking potatoes
2 teaspoons canola oil
1/8 teaspoon hot pepper sauce
1 teaspoon chili powder
1 medium tomato seeded and finely chopped
2/3 cup chopped Canadian bacon
2 tablespoons finely chopped green onion
1 cup shredded reduced-fat cheddar cheese
1/2 cup reduced-fat sour cream

(I didn't use hot pepper sauce or chili powder and I forgot the tomato...it's still sitting on the kitchen counter...dang it)


Directions

Place potatoes on a microwave-safe plate; prick with a fork. Microwave, uncovered on high for 14-17 minutes or until tender but firm, turning once. (make sure they are soft other wise taking the centers out will be really hard to do). Let stand for 5 minutes. Cut each potato in half lengthwise. Scoop out pulp, leaving a 1/4-in shell. (You can save the insides to make something else like mashed potatoes or something)

Combine oil and hot pepper sauce; brush over potato shells. Sprinkle with chili powder. Cut each potato shell in half lengthwise. Place on baking sheets coated with cooking spray. Sprinkle with the tomato, bacon, onion and cheese.

Bake at 450 degrees for 12-14 minutes or until heated through and cheese is melted. Serve with sour cream.



This was really good! Even if I forgot the tomatoes... *tear* It's a lot of work though especially if you don't cook the potatoes all the way. That and it's not something you make for a big group of people...because it doesn't make too much but it would be good for a group of 4 or 5 people.

The boyfriend gives it two thumbs up! :)
