Ok so this is basically a rip off of bruchetta but I did it my way...
First I sauteed up some garlic (lots of garlic) in some butter and then I sliced up some fresh tomatoes and I put the slices in the garlic butter sauce and cooked those for a couple minutes with the lid on.
While I let the tomato's cook I sliced up a long stick of french bread and I lightly buttered the bottom side of the bread and put the butter side down on a cookie sheet.
Once I finished that I placed a tomato slice or two on each piece of bread and made sure each piece got some butter and garlic sauce and then I sprinkled Parmesan cheese on top.
I placed the cookie sheet in the oven at 350 degrees until the cheese melted. So not very long! This way the edges of the bread get toasted but the center and bottom is still soft.
I thought this was amazing!! The garlic is wonderful and it's not hard to eat because the bread is not stiff and crumbly. My boyfriend as you know normally won't touch tomatoes with a 10 foot poll but with the garlic butter mixture...he actually went back for a second slice with out me making him ;)
