For some odd reason I am really excited to try this in like a burrito or something...and I don't even like Mexican food or stuff like that! Every time I think of burritos I think of my mom who used to take all the left overs in the fridge and put it in a burrito shell and called it "mommy surprise". I hate "mommy surprise". So lets hope this lime cilantro rice changes my feelings on burritos!

Ingredients
2 cups water
1 tablespoon butter
1 cup long-grain white rice
1 teaspoon lime zest
2 tablespoons fresh lime juice
1/2 cup chopped cilantro
Directions
1.Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
2.Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving.
